I disagree with your disagreement. If you crop the top off of that image the normal map side still shows the depression better. It could be the normal map you were using had too much high amplitude noise in it. If the normal map has huge angles in it will overwhelm the base shading, but that's a pro...

You can already do that by turning down the ambient. If you turn it down too much it looks like you're on the moon.

You should exit the game before you click a server link. If nothing happens when you click a server link you need to re-run the installer as described in the post you quoted.

I'm adding some more user friendly telemetry for erode right now. (Previously I just added printf()'s and read it off the console which was easy to code but not easy to read.) Hopefully that'll make it easier to see why it's not doing as much on corner exits.

Looks like it's crashing reading the joystick. Not sure why but as a workaround when you're making a track you could make a config that doesn't bind any controller axes.
