You need to wreck soon after, then view the demo until you wreck, then press the rewind button. There's a bug that causes the rider to still let his legs off even though he hasn't wrecked yet, which will let you do these leg whips. Or the easier way is to turn your max dab speed all the way up and do the whip over a very slow jump.
