In terms of bike models really just download and use whatever you want, you could download the stock model replacement pack located here: viewtopic.php?f=25&t=52824
For finding gear, bike models and tracks I would recommend using TMFR, it has essentially everything ever posted on the forum: https://www.tmfactory-racing.com/index.html
For really old skins and tracks that might have been on a website called PureMXS you will have to use this forum post: viewtopic.php?f=4&t=50083
