I think most people play 1 stick. There are a handful of pros that run 2 stick, TLang is one.
Binds are all preference, no one is going to run the same thing. What works for one, may not work for another. For example, Hubbard runs his clutch on a trigger and Carter runs his throttle on the stick.

It doesn't really matter what buttons you use for different binds, it matters more that your binds are efficient. There are many ways to setup the controller binds, you can do whatever you want really as long as you find something efficient for you. For example, if you use two joysticks, you'd ideally want to be able to shift gears still without moving your thumb off the joystick. You can do this by playing claw, or putting gearshifts on bumpers or something. Little things like that make a difference.

I came over from bikes and I play with 2 on bikes. So I started sim playing 2 just to keep that similar feeling i know very well. But it’s literally just user preference really.
