MX Simulator

So after dropping to the low res track at glen helen with all 8's and everything remover for glen helen my frames stayed near 125 but i still had frame drops. I put the high version in my folder instead and turned the graphics back up to 9's with no crowd remover or anything and I had 125fps locked on an eroded track with 40 guys after going back and playing in the demo. Why is it that the higher res and objects gives along with higher texture filtering nvidia settings gives me better frames than low textures with objects removed? cpu temps never got higher than 45C in sim and graphics about the same.Can anyone chime in as to why this is, other than the fact that the game is old?

Specs:
i7 4790k @4.6ghz
OC'd Asus strix 1080
16gb 1600mhz
500GB m.2 SSD (drive game is on, still 80GB to spare)

Also want to note that I am playing in a resolution of 3440x1440

im pretty sure you will always get more frames in a demo than actually playing if i remember right
