The sky change can look good, but most of the time it's easy to tell it was replaced even if it's a good image and not some galaxy or something, just based on the lighting and colors and stuff. I've done it before but only on tracks that have edges of the skybox that don't match or a really bad looking sky. The only one I can really remember doing it on is the first Freestone we had, the shot is from 2011.
Looking at it now it's pretty easy to tell the sky was put in. Most tracks now have decent enough skyboxes that they really don't stick out as being bad though.
