(I was sending this as a private message to someone, but I figured it might be useful to others too.)
For the 1.25:1 scale we're using the track should be around 35 feet wide with the starting gate being around 105 feet wide if you got it right.
The rhythm jumps are usually 2.5 to 5 feet tall. The triple takeoffs and finish are usually 5 to 7.5 feet tall. The takeoff slopes should be .3 to .4 for the rhythms and .5 to .55 for the triples and finish. The landings should have less slope.
One trick that comes in handy is to put the second to last gate at the beginning of the section you're working on and then test in time trial mode. Try to hit the section using all possible jump combos. You want to adjust the heights and slopes until it's possible to hit every combination.
