I'd suggest going from Ireland>Scotland>England>France>Germany>Switzerland>Alps>Italy.
Because if you go France to Italy, you kinda lose the good parts of the Alps.
And I know it's kind of impractical, but seriously, check out the Matterhorn.
If you go to Italy, check out Ostra on the eastern side about halfway down the country. My Grandfather grew up there.
If I were to list what I'd want to see most in Europe, it'd be this:

If You come to Italy You must visit Venice, I live 50 kilometers far from there and my mother is also a tour operator...btw if You wanna have fun too You can go clubbing here where I live in Jesolo, its a pretty known city around here on the sea, with a great nightlife, the best period to come is June-August though. (lots of chicks from different countries).
In the norther part of italy there are also lots of tracks to ride in (mantova, malpensa, dorno) If You are interested in riding here also. Dunno If You can rent bikes somewhere, i'll get some infos.

Toulouse in south france is a nice place with a lot of students, nice girls and party. The town is very nice too.
Hossegor in west coast south is cool if you like surf culture with a lot of guys from different country.
French Riviera is cool too but expensive.
Paris is the nice place for visiting and culture (Louvre/eiffel Tower, Montmarte, so many nice place in Paris...

Perpignan

I don't know how you can combine this with Italy though since it's the complete opposite way.

I would say Amsterdam. You can get some green stuff there if youre interested in that. You can visit the Red Light District, always fun. Lots of little rivers through the city wich is pretty nice to see. There also lots of museums.

Come to Finland, it's eternal winter and roaming polar bears. What could be better?
The Alhambra fortress in Granada is definitely worth a visit.
The old city/castle in Carcassonne is pretty cool, the inquisition museum that's there is also worth checking out. Who doesn't like medieval torture devices?
Seville's a great place too.
