Nate here is a quick gif break down

Gif #1 - I just kind of guessed a shroud type shape for an example, here I am just selecting the edges and connecting (loop cut in blender terms) them right down the middle. I then adjust it to the shape/curve I want it.

Gif #2 - The real magic, now instead of just normally cutting the new polygons like in Gif #1, I select them and hit Flow Connect. As you can see it kinda auto shapes it depending how your geometry already is. Definitely makes things easier.

Ofcourse it may not be a perfect match to the reference, usually it's close but it gives you a really good starting point and also helps with poly spacing, size, and orientation.
Sorry for the late reply, just saw this now. Thanks for the walkthrough, that tool is awesome!

For normal map bake guru's who are always questioning hard edges vs normal maps look here: http://www.polycount.com/forum/showthread.php?t=107196

Just read it and wow, should rebake my Honda.... Seriously though, if anyone is wondering I did Method A for my Honda (I baked every last piece), I would have done B now that I see this.. but live and learn I guess.

Question for Jlv, does the vertex count really double (atleast in this engine) on UV seams and hard edges? Never knew that happened, pretty crazy your tris count really isn't final until she is in game.

With that being stated... With my Honda being as detailed as it is, all I can say is:
