You'll have to reinstall the game to the new HDD so it maps the drives accordingly. You can't have the Program Files .exe on C;? then the personal drive on another drive unless you do that symlink. Also,
... a hard link makes it appear as though the file or folder actually exists at the location of the symbolic link, and your applications won’t know any different. Thus, hard links are of the most interest in this article.
Sounds like to me you did it right and it confused you. The files are stored where the link it but it shows them as if they never moved.
Store your Music/Pictures/Videos on a second hard drive, but make them show up in your standard Music/Pictures/Videos folders so they’ll be detected by your media programs (Windows 7 Libraries can also be good for this)

If you go to where the link is at and you see the files in your G: drive then yes, they are stored there but being shown as located to the C:. If I understand correctly, if you right click on the file that is symlinked in the C: drive and go to Properties it will either show in Location under the General tab that it is stored on the G: drive or show that the type of file is a shortcut.

It's been a while and that explanation felt really bad so if I lost you let me know and I'll try to re-word it better. Overall though, yes, It will still show the files on C: however they will be stored in G:.
