Low pressure is the resistance when the tire is just touching the ground. High pressure is when it's compressed to the rim.

It's the average over 4 steps (1/32 second). You're right that a longer average might help. I think I must have experimented with that when I wrote it though.
I guess I could always just hack it and raise the G limit when you haven't been in the air recently.

It's more difficult than it looks to make a good test for it. Basically I want to be able to detect it early so I can detach the rider early for a natural looking fall, so one test condition is ride velocity relative to the bike. Just installed this snapshot. Textures look really bad, its like the ground textures 2 meters away from you are noticeably lower resolution. Everything is maxed in the graphics settings. You're probably watching a bot play. In the "New Race" screen, set one gate to "Human". That is the gate you will start from.

In the demo files the positions of the bike parts are all relative to their parent part which forces them to fit their constraints. When it's live ODE does allow the joints to bend a little. Surprising it gets as far as the screenshot though. I might have to investigate tightening it up a bit.
