Take a look at the powercurves for the 2-strokes and you can see what the problem is, they sign off earlier than 4-strokes when compared to their rev limit.
The 125 ingame can holeshot 250fs quite well if you just manage to keep it at around 11k. Same thing with the 250, keep its rpms at 8-8.5k and watch that thing fly.

regarding the 250 start... 3rd gear start on a cr250 with -1/+1 gearing. Holeshot every time.
