How do i go about getting this image to the appropriate pixels to fit in my signature box?

Use any photo editing software ex:paint to change its size, I believe the limit is 120 pixels high. If it's a jpeg you should be able to right click and go to properties and see its current size and shrink from there.

Ive shrunk it down to this size. But it is still above 500 pixels horizontal and vertical?
