The direct steering setting changes how the stabilizer interprets your steering input. At 0, the stabilizer will interpret the steering setting as a lean angle and try to steer to achieve that angle. At 1, your steering input is directly applied to the front wheel. You might be happier with it at .25 or so.

Just tried .25 and It makes the steering very twitchy. I have been messing around with it tonight a little, I raised the stability up to 50 and I can at least get a few laps around the track.
I have never been that great at video games and I just need to chalk it up to the fact that I suck. Watching videos on youtube of people ripping it up in the game is probably what I just need to stick too.
The top riders are freaks. I have no idea how they run record laps for 20 laps without crashing. For a normal guy you want to start with more conservative settings on the easier tracks and work your way up to something more aggressive.

Ok, I set my stability at 50, Been riding like that all day today, I am getting used to it. Learning how to lean forward and sit while turning is helping a lot.

There you go, a lot of the top guys, in both 250 and 450 have been playing for quite some time. It took me almost 4 months to get used to the game, and another year before I even thought about trying to qualify for a big race. Once you get the hang of it, you're hooked.

You can't just jump down like that. Go from 50,48,45,42, etc. That's how I did it, now I'm playing with 10.

Well, I took a step back and gave it a good week or so without playing and doing some reading. Everyone I kept talking too said that the setup was not that important.
I found a bunch of setups and one of them is Vanderlee's setup. I loaded that setup on a yz250f and the stability was default at 10. I decided to try it and I must say that I can actually now play the game.
