Can someone help me?

Hi, i'm new to this game and I have the game figured out with arcade physics on. When I turn arcade physics off, I can barely go in a straight line and usually end up on my face and if I can hit a jump I go sideways in the air and fall without moving anything on the controller. I have tried multiple adjustments referred by many youtubers and I just can't ride with arcade physics off. Could someone tell me what I am doing wrong and suggest any adjustments? I use an xbox 360 controller.

put rider stability on 100 and go down from there until you feel comfortable, then gradually lower that until can handle it and make corners and do full whips
