Hi, I've recently started having a go on the default multiplayer server but after downing loading the stock 2018 bikes all of the other riders are still default. Which are the most common .saf files I need guys?

Most people put name and number on, so your skins won't match, unless you get each individual skin that the riders use. It's no idea to try and see people on the stock server, but you can download the "stock model replacement" to see some more bikes.
