Smoothing groups, turbo smooth on the bikes and shit. Everyone does that, myself, p2sta, etc. You can see the polys on the seat of the bikes.

3ds max, im sure blender has something to use. I just don't know because ive never used it.

Thats what normal maps do, you cant just take a bike model and turbosmooth it, it will change the uv's. Now piista's renders are usually a highpoly model so yes they are turbo smoothed. smoothing on the bike is the way it should be, maybe the normal maps aren't working right or it is made this way (I don't know the bike model that much to say which is right) but the smoothing is done right from his side.
As Mason said, you can't just turbosmooth a lowpoly model, thats gonna mess up the model really bad unless you edit it drastically, so i don't see problem in this particular area.
David - try to get some hdri map (there is tons of free hdris around the net) and use it for reflections (of course you need to add reflections to the materials). I would add a sun as well not the lighting is just skylight (or plane light) which is kinda boring and flat. Try to add sun (direct light) and match direction of shadows with the background picture
For the grass, check Hair/fur tool and some tutorials about that, you can get really nice results fast.
Greg - Subdivision Surface is the name of the modifier you need to look at in Blender

I want to learn how to render so bad, but every time i get into it, i get busy and lose track. Then a few months later i really want to learn again.
