How did you get you leg out like that?

Its simple, when your in the air press x, double trigger, double x, y, x, square, square!

You forgot the left/right to make him know which leg, that goes at the end.

Or...

You can play back a race and when he has his leg out (Crashed etc.) you pause it. Then use the go back button and his leg will stay out. After each time you press back press the step forward so you can see where he is.
