When turning you want to sit down, also having a low stability will help you turn quicker

I wouldn't recommend low stabilities, at least not for racing. Most of your turning should be done with the gas (gently sliding the rear around). If you lower your stability you will screw up in the whoops and technical sections too much (at least that is what happens to me). With that said, turning is hard no matter how you do it. You have to be patient and not just jam on the gas, just ease it on at the right time. Also, if you don't have an analog control for the throttle, my suggestions probably won't help, but this one will: get analog controls!

My settings go like this, change the stability to 20, then go into advanced settings and crank the steering and roll damping up to 70 or more. You won't be able to whip your bars around, but it will let you develop a turning style where you have to use the gas to turn (which is what all the fast people do, just watch the replays [I'm not claiming to be fast, watch the fast people's replays]), and it will still get your through choppy sections without flinging you around.

I forgot to add, there is a situation that I have found that favors a low damping setting. When you are jumping into a turn and need to brake as hard as possible and turn at the same time, people that have low damping can do it with relative ease, but it is hard when you have the high damping. But for all other turning situations it seems to be a wash. The benefit with the high damping is that you are more consistent everywhere else, like whoops, rhythm sections, choppy parts, etc. (but you suck at corners that you have to jump into).
