Right click on sim icon, go to properties, go to the target line and after the final quotation mark enter this --hidden-pause --hidden-hud
This will disable the visibility on the hud and pause in game and provide an overall better screenshot.

Or you can do it the lazy way and crop it out in Photoshop :lol:

It's best just to make a copy of Mx Simulator on your desktop and call it "screenshot version" and have it without HUD or anything.
